What they need

EquipmentSix hoods, nine ducts, six exhaust fans, and approximately 55 filters, including grease-removal devices and accessible plenums.
CleaningRemove grease and combustible deposits; include all labor, equipment, chemicals, surface protection, and waste removal.
AccessDucts have slight bends and no access panels; cleaning is typically performed from the kitchen side. Roof access is through a boiler-room hatch, and roof vents must be unbolted for cleaning.
ScheduleTwice yearly, anticipated in December and June, over five years. Work is scheduled Monday–Friday after 4:00 p.m., excluding holidays.
Personnel and pricingTrained personnel must meet facility background screening and access requirements. No subcontracting is permitted; include applicable prevailing wages.
DocumentationProvide chemical safety data sheets before service and a service report identifying systems cleaned and observed deficiencies after each visit.
