Menu: 28-day cycle menus with breakfast, lunch, dinner, snacks, and special-event meal capability.
Food standards: Culturally relevant New Mexico menu items, local/regional sourcing where feasible, no sugar-sweetened beverages or energy drinks.
Compliance: Current New Mexico food service permit, HACCP plan, ServSafe-certified supervisor each shift, allergen protocols, and lactose-free or fortified non-dairy milk options.
Pricing: Per-person-per-day pricing with separate food, labor, overhead, and profit components.
